Traditional pasta

This is a great tradition from my home to yours. Whenever there is chicken soup for dinner there must be homemade pasta in it. I remember when I was young my mom took me to the countryside to my aunt's house and she always made fresh pasta. Before boiling it, we used to take a piece of rolled out dough and fry it on the old, countryside oven.


500g flour
4 eggs
pinch of salt
cold water as much as necessary to connect all the ingredients

Place flour on a flat surface. You would then shape a hole in the center and crack 4 eggs inside it. Mix it slowly with the flour. Knead the dough until it's smooth and not sticky. Press the dough with your finger, and if the dough moves back, you will know that it's ready. Roll it out. When it sticks to the roller, sprinkle with flour. Stop when it's 1 mm thick. Make a roll and cut it. Put it in boiling and salted water. Cook around for 3-4 minutes. Take out one noodle and check if it's ready by throwing it against the wall to see if it sticks ;)
